1. In a mixing bowl, take 100 grams of Instant Millet Idly Mix.Add 2 tablespoons of sour curd to the mix. The sourness of the curd enhances the taste of the idlis.Pour in 125 ml of water into the bowl. Adjust the water quantity as needed for the desired batter consistency.
2. Mix the ingredients thoroughly to form a smooth batter. Ensure there are no lumps.Cover the bowl and set it aside for approximately 15 minutes. This resting time allows the batter to ferment slightly, enhancing the flavor and texture of the idlis.After 15 minutes, add a pinch of salt to the batter. Adjust the salt according to your taste.
3. Grease the idly molds of a steam cooker or idly stand with a little oil or ghee. Carefully ladle the batter into each idly mold, filling them about three-fourths full.Steam the idlis in the steam cooker for around 10-12 minutes or until a toothpick inserted into an idly comes out clean.Once done, remove the idlis from the molds and serve them hot.
